I have done that in the past but it takes at least 3 to 4 days to get an approval. The one time that I did update my app I had to take it off the store until it was fixed. How do I know I have a new release date without removing it from the store?

It's quite simple.
You need to update/upgrade your app and Apple needs to approve it.
